It looks harmless because it’s “just a small side,” but when eaten together with rice, it becomes a combination of carbohydrates layered on top of each other. Another common case is japchae. Many people think of it as a light vegetable dish, but the noodles are made from sweet potato starch. When you eat japchae with rice, which is quite common, you are effectively combining two different starch sources in one meal. It feels balanced on the plate, but the body processes it differently.

Then there are situations like stews or soups that include potatoes or dough-based pieces. Because they are mixed into the dish, they are easy to overlook, but they still contribute to the total carbohydrate load of the meal.

A More Practical Way to Adjust Korean Meals

What worked for me was not removing these foods completely, but changing how I approached them.

Instead of treating starchy vegetables as “just vegetables,” I began to count them as part of my carbohydrate intake. On days when I ate dishes like gamja-jorim or japchae, I reduced the amount of rice or avoided adding other starch-heavy foods in the same meal.

Another small adjustment that made a difference was how I prepared certain foods. For example, when I ate potatoes or sweet potatoes, I started letting them cool down after cooking before eating them. When these foods cool, part of the starch changes into what is known as resistant starch, which is digested more slowly.

At first, I didn’t expect much from this change, but over time I noticed that meals prepared this way felt more stable. The rise in blood sugar was not as sharp, and the overall response became easier to manage.


What Changed After That
